Yes, it's Time for Fish Tacos and Home Made French Fries!

 

My kids, and hubby, love fish tacos.  We first had them many years ago at a friend's house.  They are easy to make, somewhat nutritious, and very versatile.



We always serve with nacho chips and salsa, but this time, I added some French fries, deep fried in my T-fal fryer.



Started with three, healthy russet potatoes.



Peeled, then cut into long strips.  Keep the potato in water while you cut the rest.



Then, lay the fries out to dry.  You don't want to put water-dripping potato into the fryer.



While they sit and hang for a spell...


...prep the fish.
We always use tilapia.  You can buy frozen bags of it at many food stores.



Remove from packaging and place in a bowl...if frozen, these should be patted with paper towel to dry a bit.

I add evoo, then some spices.  Always some salt and pepper, and this time around...


lemon & pepper, dill, and chili pepper.



Rub the fish with the oil and spices so they are evenly coated.



And we bake...I do 400˚ for about 20-25 minutes.  


Now, let's go back to those fries.

I fry a small batch at a time,



then let drip dry a bit on a rack.



Once they are all done...they aren't done.



Just before serving the fish and accoutrements... 

Throw those potatoes in for one last fry, til golden brown.

Yes, double fry.

Immediately place them on the rack and season.



Then, serve hot with your fish tacos.

We use large flour tortillas that I warm,
chopped iceberg lettuce,
avocado,
fresh chives,
chopped onion,
taco cheese,
black beans,
and usually fresh, diced tomato,
(I was out of that for this cook)
sour cream and salsa as well



Of course, the options are limited only to your taste and sense of fun.


Layer...and roll
